| Method: |
Heat oil in a large pan, add shanks and garlic and cook until shanks are well browned. Add water ane red wine, bring to boil and simmer uncovered 1 hour or until lamb is tender. Strain and reserve stock. Remove lamb from bones and shred finely.
Die onion and slice celery.
Heat extra oil in same pan, add onion and celery and cook until soft, about 3 minutes. Add reserved stock and bring to the boil. Add pasta, boil uncovered for 10 minutes or until pasta is tender. Stir in lamb and simmer 5 minutes. Serve sprinkled with chopped parsley.
Serves 6.
